Catnips Chili Pie

Catnips Chili Pie
1½ cups. basmanti rice (boil in 2½ c. water, 1 t. salt)
2 onions diced
1 courgette sliced in thin circles
2 peppers (red and yellow) diced
1 can corn
2 small packages ham cubes
1 little jar chili sauce
evt. extra chili powder
Sauté onions, add peppers, then courgette. Then corn and ham. Add cooked rice and chili sauce. Taste and add extra chili powder if you want. Make a large portion pie dough. Bake in large pie dish with lattice top.
Bake 350 for 40 minutes.

Cats Quick Dinner



Once again a Daniel creation. My arm is in a sling so it's good with easy meals.
Cats Quick Dinner
Boil some noodles. Daniel chose Chinese egg noodles.
Cut 2 onions in thin rings and sauté. Add one diced red pepper and four hot dogs cut in slivers and sauté. add some frozen peas. Add 1 T soy sauce and then the noodles. Mix well and serve. Tasty, quick and easy.

Catnips Curry Pie

This is a dinner pie and really Daniels idea.
Catnips Curry Pie
Crust: put one cup of water in a bowl. add 1 t. dry yeast and some whole wheat flour. cover and let stand one hour. then add 2 T. olive oil, 1 t. salt and more flour. Knead until a good consistency.
Boil 2½ c.water
Add 1 t. salt
2 t. curry powder
1½ c. basmanti rice
simmer 15 minutes.
meanwhile:
chop 1 onion, garlic, red pepper. Sauté in olive oil. Add some frozen peas, green beans and corn and 2 t. curry. Brown 1 lb. lean ground beef and add to vegetables. add 1 t. salt. add the cooked curry rice and mix well. Put all of this into a very large greased pie pan. (mine is white porcelain). Roll the dough and cover. cut slits in the top in a decorative pattern and bake at 350 about 30 minutes.
